There is nothing like a bowl of hot, soothing chicken noodle soup on a chilly autumn day. But when I have a craving for something, I want it right away. If it takes me too long to make it, my craving seems to dissipate. So I took one of my favorite chicken noodle soup recipes, Paula Deen’s <a href="http://www.foodnetwork.com/recipes/paula-deen/the-ladys-chicken-noodle-soup-recipe.print.html" target="_blank">The Lady’s Chicken Noodle Soup</a>, and modified it to make it a quick-and-easy recipe. I had three bowls of hot chicken noodle soup on the table in no time. My daughters are a big fan of this soup and love dipping their crusty bread in it. You can use the rest for chicken salad – see recipe <a href="http://myrosecoloredshades.com/2014/04/17/recipe-highlight-jalapeno-chicken-salad-and-mint-lime-iced-tea/">here</a>.)<br /> 3 tablespoons chopped fresh parsley leaves<br /> 1 cup sliced mushrooms (optional)<br /> 2 teaspoons chopped fresh rosemary leaves (optional)<br /> 1/3 cup cooking sherry<br /> 1/3 cup grated Parmesan<br /> 1/2 cup heavy cream<br /> 1/2 lemon<br /> salt and pepper, to taste<br /> crusty bread, for serving</p> <p><span style="text-decoration: underline;">Directions</span></p> <p>1) Bring chicken broth to a boil, add carrots, and cook for 3 minutes.</p> <p>2) Add celery and continue to cook for 5 to 10 minutes.</p> <p>3) Add egg noodles and cook according to directions on package.</p> <p>4) When noodles are done, add chicken, mushrooms, parsley, sherry and rosemary.</p> <p>5) Add Parmesan and cream. One of my favorite cuts of beef is the <a href="https://en.wikipedia.org/wiki/Flat_iron_steak" target="_blank">flat iron steak</a>. It’s tender, juicy, and easy to prepare. The flat iron steak can stand on its own with a generous sprinkle of salt and pepper but I always like to have it with a side of <a href="https://en.wikipedia.org/wiki/Chimichurri" target="_blank">chimichurri</a> sauce. I also throw in a few vegetables on the grill and they go perfectly with the chimichurri sauce as well. Allow steak to rest at room temperature for about 30-45 minutes before grilling.<br /> 2. Sprinkle steak generously with salt and pepper.<br /> 3. Prepare grill to medium-high heat.<br /> 4. Grill 4-6 minutes on each side depending on desired doneness; 4 minutes on each side for medium-rare.<br /> 5. Slice thinly against the grain.</p> <p><em>Note</em>: Same cooking time and temperatures apply for pan-searing.</p> <p><strong>Chimichurri Sauce</strong></p> <p><span style="text-decoration: underline;">Ingredients</span><br /> Makes 1 cup<br /> 1 cup packed fresh Italian parsley<br /> 1/2 cup packed cilantro<br /> 1/4 cup fresh mint<br /> 1/2 cup olive oil<br /> 1/3 cup red wine vinegar<br /> 2 garlic cloves, peeled<br /> 1/2 teaspoon red pepper flakes<br /> 1/2 teaspoon ground cumin<br /> 1/2 teaspoon dried oregano<br /> 1/2 teaspoon salt<br /> 1 teaspoon honey</p> <p><span style="text-decoration: underline;">Directions</span></p> <p>Place all ingredients in a food processor or blender. Purée until just smooth. Trim the asparagus and peel the carrots.<br /> 2. Brush with olive oil.<br /> 3. Sprinkle with salt and pepper.<br /> 4. Grill asparagus for 4-5 minutes, turning once. Grill carrots for 10-12 minutes, turning once.</p> <p><em>Note</em>: For oven roasting, pre-heat oven to 400°F. Prepare the vegetables as described above. Roast asparagus for 6-7 minutes. So when Nancy of <a href="http://imadethisdish.com" target="_blank">I Made This Dish</a> reached out to me to share her 15-Minute Vietnamese Summer Rolls recipe, I had to try it. I would never endorse anything that I haven’t tried first so I did follow Nancy’s recipe as is but I also made some with shrimp instead of chicken. They both turned out delicious, and so easy to make!<span id="more-7595"></span></p> <p>The rolling part takes a little practice. I have to admit, mine didn’t come out as pretty as the ones pictured below. I found Nancy’s step-by-step directions with pictures very helpful so I thought I’d ask her to guest post for today and showcase her recipe. This is the type of dish that I crave in the summertime, healthy, light, and tasty.</p> <p> </p> <h1 style="text-align: center;"><span style="color: #000000;"><strong>15 MINUTE SUMMER DISH: VIETNAMESE FRESH ROLLS</strong><br /> </span></h1> <p><span style="color: #000000;">It’s getting <strong>H.O.T</strong> outside! Finally, summer is here! <i>That means it’s time for cute skirts, for summer dresses, for short shorts, and of course for sexy bikini too.</i></span></p> <p><span style="color: #000000;">I started to see more and more colleagues in my office opt for salad for lunch. But let’s be real, </span><strong><span style="color: #000000;">we say we want to be healthy, but deeply inside we all want something delicious, like a juicy burger, right? We have developed this recipe exclusively for you, the busy fashionable women.</span></p> <ul> <li><span style="color: #000000;"><strong>It’s very healthy, but not your typical boring salad: </strong>It’s loaded with fresh vegetables and it bursts with delicious flavors from smoky rotisserie chicken to aromatic cilantro to savory dipping sauce.</span></li> <li><span style="color: #000000;"><strong>It’s super quick:</strong> 15 minutes and dinner is ready! <em>(I swear!)</em></span></li> <li><span style="color: #000000;"><strong>And the best part:</strong> You probably have most of the items at home. On your way home tonight, drop by the grocery store to pick up a ready rotisserie chicken for dinner. Your dinner is <u>75% completed</u>! <em>(How simple is that?)</em><br /> </span></li> </ul> <p><span style="color: #000000;">You sure will LOVE these fresh Vietnamese rolls, and if you don’t like them……. just send the leftovers my way!</span></p> <p><span style="color: #000000;">What you’ll need:</span></p> <ul> <li><span style="color: #000000;"><strong>4 ounce dried rice vermicelli</strong></span></li> <li><span style="color: #000000;"><strong>12 sheets of rice papers</strong></span></li> <li><span style="color: #000000;"><strong>6 lettuce leaves, cut in half</strong></span></li> <li><span style="color: #000000;"><strong>12 fresh cilantro sprigs</strong></span></li> <li><span style="color: #000000;"><strong>1/2 carrot, cut in matchsticks</strong></span></li> <li><span style="color: #000000;"><strong>2 cups of cooked shredded chicken (leftover rotisserie or turkey)</strong></span></li> </ul> <p><span style="color: #000000;"><u>Vietnamese nuoc cham (fish sauce dipping sauce)</u></span></p> <ul> <li><span style="color: #000000;"><strong>2 garlic cloves, minced</strong></span></li> <li><span style="color: #000000;"><strong>1 tablespoon lime juice</strong></span></li> <li><span style="color: #000000;"><strong>2 tablespoon sugar</strong></span></li> <li><span style="color: #000000;"><strong>2 tablespoon fish sauce</strong></span></li> <li><span style="color: #000000;"><strong>10 tablespoon of water</strong></span></li> </ul> <p><span style="color: #000000;">Don’t have fish sauce? No problem!</span></p> <ul> <li><span style="color: #000000;"><strong>Opt for reduced sodium soy sauce & wasabi<br /> </strong></span></li> </ul> <p>Directions:</p> <p><span style="color: #000000;">1. Cook rice vermicelli following package instruction. Drain, and set aside to cool.</span><br /> <span style="color: #000000;"> 2. In a large shallow bowl (or a frying pan) add warm water. Working with one sheet at a time: soak a sheet of rice paper into water to completely submerge, about 5 seconds. You can omit chicken/turkey for vegetarian version. Replace cilantro with fresh basil or omit altogether. I’m always buying power greens at the grocery store, I’v tried an array of bottled power juices and I couldn’t resist the green power smoothie at the local Panera. I’m not sure about the validity of the “power” claim but in general, most of these foods have a high level of nutritional value. All I know is that it can’t be bad. So I decided to come up with a quick and easy power salad that I can whip up in no time and enjoy at least 2-3 times a week.<span id="more-6767"></span></p> <p>I started with this recipe for <a href="http://www.shelikesfood.com/1/post/2015/02/warm-lentil-kale-potato-salad-lemon-dijon-dressing.html" target="_blank">Warm Lentil, Kale & Potato Salad</a>, which I tried and loved, but decided to make some modifications. I replaced the baby potatoes with sweet potatoes for the higher nutritional content (especially when it comes to vitamins) and just because I love sweet potatoes. To mix it up, I may even substitute quinoa for the lentils in the future. And as always, I made sure to use ready-to-use ingredients to cut down on prep time, like the steamed lentils from Trader Joe’s and already cubed sweet potatoes and chopped kale. This salad is a winner in so many ways. It’s not only good but it’s also good for you.</p> <p><a href="http://myrosecoloredshades.com/wp-content/uploads/2015/04/IMG_8264r1.jpg"> <span class="pibfi_pinterest "> <img loading="lazy" decoding="async" class="alignnone size-large wp-image-6771" src="http://myrosecoloredshades.com/wp-content/uploads/2015/04/IMG_8264r1-1024x726.jpg" alt="IMG_8264r1" width="560" height="397" srcset="https://myrosecoloredshades.com/wp-content/uploads/2015/04/IMG_8264r1-1024x726.jpg 1024w, https://myrosecoloredshades.com/wp-content/uploads/2015/04/IMG_8264r1-200x142.jpg 200w, https://myrosecoloredshades.com/wp-content/uploads/2015/04/IMG_8264r1-300x213.jpg 300w" sizes="auto, (max-width: 560px) 100vw, 560px" /> <span class="xc_pin" onclick="pin_this(event, 'http://pinterest.com/pin/create/button/?url=https://myrosecoloredshades.com/2015/04/24/recipe-highlight-the-power-salad/&media=http://myrosecoloredshades.com/wp-content/uploads/2015/04/IMG_8264r1-1024x726.jpg&description=Recipe Highlight: The Power Salad')"> </span> </span> </a></p> <p><strong>The Power Salad Recipe</strong></p> <p><span style="text-decoration: underline;">Ingredients</span></p> <p>2 teaspoons olive oil<br /> 2 cups of peeled and cubed sweet potatoes (about an inch thick)<br /> 1 1/2 cups cooked lentils (I used Trader Joe’s steamed lentils)<br /> 1 clove garlic, minced<br /> 1 bunch kale, 3-4 cups chopped<br /> 1 handful dried cranberries, about 1/4 cup<br /> 1/4 cup toasted pecans or walnuts<br /> salt & pepper, to taste</p> <p><span style="text-decoration: underline;">Lemon Dijon Dressing</span><br /> 1/4 cup olive oil<br /> 2 teaspoons Dijon mustard<br /> 2 tablespoons fresh lemon juice<br /> 1/4 teaspoon maple syrup, or honey<br /> aalt & pepper, to taste</p> <p><span style="text-decoration: underline;">Directions</span></p> <p>1. Pre-heat oven to 400ºF. Place cubed sweet potatoes on an aluminum foil wrapped baking pan. Drizzle with olive oil and add salt and pepper. Toss and space out the sweet potatoes on the pan. Bake for about 15-17 minutes, being careful not to overcook. There will be additional cooking time later on.</p> <p>2. Heat a large pan over medium heat and add olive oil. Add garlic, thyme and lentils and stir for 2 minutes. Add the sweet potatoes and stir. Cook for another minute or so. Then add the kale, cover and cook for another 3-4 minutes until kale starts to soften and wilt (if using baby kale, cut down on cooking time). Transfer to a large bowl and add dried cranberries and toasted nuts.</p> <p>3. For dressing, whisk all the dressing ingredients in a small bowl until combined. That’s why I’m loving semi-homemade recipes these days. They’re quick, easy, you can make them healthy and you can enjoy it in the comfort of your own home. This particular recipe has been my all-time favorite go-to dish when I’m crunched for time and seriously the easiest pasta dish you’ll ever make. No, really. It only takes five main ingredients and virtually no prep time. And it’s delicious! <span id="more-3546"></span>I got this <a title="Ravioli with Arugula, Tomatoes and Pancetta" href="http://www.foodnetwork.com/recipes/giada-de-laurentiis/ravioli-with-arugula-tomatoes-and-pancetta-recipe.html" target="_blank">recipe</a> from one my favorite Food Network celebrities, Giada De Laurentiis. Bring a large pot of salted water to a boil over high heat. Add the ravioli and cook for 7 to 9 minutes until tender. Drain.</p> <p>2. In a large nonstick skillet over medium-high heat, add the pancetta and cook stirring frequently, until crispy, about 8 minutes. Remove to paper towels to drain.</p> <p>3. Add the tomatoes, olive oil, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook for 2 minutes until tender. Add the arugula and 1/4 cup basil and cook until wilted, about 30 seconds. Stir in the butter and melt.</p> <p>4. Add the ravioli and cooked pancetta and toss until coated. Season with salt and pepper, to taste. Transfer the ravioli to a large serving bowl.
