Since\u00a0Mother’s Day is coming up, I wanted to share\u00a0a semi-homemade recipe that’s not only delicious but quick and easy to put together, anything to make mom’s life easier. This dish is a family favorite and, by finding a few shortcuts here and there, I’ve been able to whip up this meal in no time. I don’t mind semi-homemade as long as it doesn’t compromise the taste and I can include lots of fresh ingredients. This meal is perfect for the warmer weather and always fun to eat with the family. I put out all the ingredients and everyone makes their own tacos with their favorite ingredients, even my 4-year-old! Along with the cole slaw topping, I always have shredded lettuce, diced tomatoes, shredded cheese, sour cream and lime wedges. And since we all love salsa in my family, I always have a medium tomatillo salsa along with a mild salsa for the kids.<\/p>\n<p><a href=\"http:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/fishtacos2rev1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2433\" src=\"http:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/fishtacos2rev1.jpg?w=560\" alt=\"fishtacos2rev1\" width=\"560\" height=\"373\" srcset=\"https:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/fishtacos2rev1.jpg 3328w, https:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/fishtacos2rev1-300x200.jpg 300w, https:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/fishtacos2rev1-1024x683.jpg 1024w\" sizes=\"auto, (max-width: 560px) 100vw, 560px\" \/><\/a><br \/>\n<strong>Fish Tacos<\/strong><\/p>\n<p><span style=\"text-decoration:underline;\">Ingredients<\/span><br \/>\n1-2 boxes of pre-made battered fish fillets (either from Trader Joe’s or Costco, 1 box is plenty if buying from Costco)<br \/>\n1 bag of corn tortillas (follow instructions for warming up, may use flour tortillas if preferred)<br \/>\nToppings:<br \/>\nDiced tomatoes<br \/>\nShredded lettuce<br \/>\nShredded cheese (I use a Mexican mix or Monterey Jack.)<br \/>\nSour Cream (I mix buttermilk with the sour cream to thin it out and place it in a squeeze bottle for easy access; sometimes I add a little bit of adobo sauce from canned chipotle peppers for a little spice.)<br \/>\nColeslaw (see recipe below)<\/p>\n<p>Instead of going through the tedious process of taking each fish fillet and coating it with batter and then frying them and making a big mess of the kitchen in the process, I prefer to buy the battered fish pre-made either from Trader Joe’s or Costco. Both stores carry a few\u00a0different options. This shortcut allows you to\u00a0have the fish fillets hot and ready for the tacos right out of the oven in about 15-20 minutes. All you have to do is\u00a0follow the instructions on the box!<\/p>\n<p><strong>Coleslaw with Cumin-Lime Vinaigrette Recipe<\/strong> (original recipe <a title=\"Bobby Flay Coleslaw with Cumin-Lime Vinaigrette\" href=\"http:\/\/www.foodnetwork.com\/recipes\/bobby-flay\/coleslaw-with-cumin-lime-vinaigrette-recipe2.html\" target=\"_blank\">here<\/a>)<\/p>\n<p><span style=\"text-decoration:underline;\">Ingredients<\/span><br \/>\nDressing:<br \/>\n1\/3 cup fresh lime juice<br \/>\n1\/2 teaspoon ground cumin<br \/>\n2 cloves garlic, chopped<br \/>\nFew dashes of\u00a0hot sauce<br \/>\n1\/2 cup olive oil<br \/>\n<span style=\"text-decoration:underline;\">Directions<\/span><br \/>\nPlace all ingredients in a blender and blend until smooth. You may use a whisk to blend.<\/p>\n<p>Coleslaw:<br \/>\n3 carrots, peeled and shredded (Sometimes I\u00a0use\u00a0a bag of shredded carrots from\u00a0the grocery store.)<br \/>\n1 medium head green cabbage, shredded (Sometimes I use a bag of coleslaw mix from the grocery store.)<br \/>\n1 red bell pepper, julienned<br \/>\n1 red onion, thinly sliced<br \/>\n1\/2 cup chopped fresh cilantro<br \/>\nSalt and pepper<br \/>\n<span style=\"text-decoration:underline;\">Directions<\/span><br \/>\nCombine all ingredients in a large bowl, toss with the dressing and season with salt and pepper to taste.<\/p>\n<p><a href=\"http:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/blackbeansrev1.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-large wp-image-2431\" src=\"http:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/blackbeansrev1.jpg?w=560\" alt=\"blackbeansrev1\" width=\"560\" height=\"799\" srcset=\"https:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/blackbeansrev1.jpg 1367w, https:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/blackbeansrev1-210x300.jpg 210w, https:\/\/myrosecoloredshades.com\/wp-content\/uploads\/2014\/05\/blackbeansrev1-717x1024.jpg 717w\" sizes=\"auto, (max-width: 560px) 100vw, 560px\" \/><\/a><br \/>\n<strong>Black Bean Soup<\/strong><\/p>\n<p><span style=\"text-decoration:underline;\">Ingredients<\/span><br \/>\n2 tablespoons\u00a0olive oil<br \/>\n3\/4 cup onion, finely chopped<br \/>\n1\/2 cup green bell pepper, finely chopped (Sometimes I use yellow or red bell peppers for color.)<br \/>\n2 teaspoons minced garlic<br \/>\n2 cans (15.5 oz) black beans, undrained<br \/>\n2 teaspoons oregano<br \/>\n1\/2 teaspoon cumin<br \/>\n1 1\/2 cup water (Sometimes I use chicken broth.)<br \/>\n1 cube beef or chicken bouillon (e.g. Knorr, omit if using chicken broth instead of water)<br \/>\n2 tablespoons red wine vinegar<br \/>\n1 bay leaf (optional)<br \/>\nSalt and pepper to taste<\/p>\n<p><span style=\"text-decoration:underline;\">Directions<\/span><\/p>\n<ol>\n<li>Heat oil in a saucepan on medium heat. Stir in onions, pepper and garlic and cook until tender, about 8 minutes.<\/li>\n<li>Stir in remaining ingredients except the vinegar and bring to a boil. Add vinegar.<\/li>\n<li>Reduce heat and simmer for about 10 minutes.
