This chilly weather is making me crave chili! No pun intended. When it’s cold outside, I almost always crave something hearty, brothy and spicy. Chili seems perfect for this kind of weather. And you’ll never find a chili recipe as quick and easy as this one. It takes all of about 30 minutes to make but it tastes like you’ve simmered it for hours. This recipe was given to me by a friend but I tweaked it and added a couple of ingredients to make it more to my liking. I always like to have my chili with a little bit of sour cream, shredded cheese and heaps of tortilla chips. There is nothing better than a hearty bowl of chili to warm you up inside in the cold winter months.
Chili Recipe
Ingredients
1 lb. ground beef (Sometimes I use ½ lb. sausage and ½ lb. ground beef.)
2 cups water
1 cup frozen corn
1 cup salsa*
2 Tb chili powder
1 ½ tsp brown sugar
2 ½ tsp cumin
1 ½ tsp oregano
¼ tsp salt
16 oz. can of chili beans*
14 oz. diced tomatoes (I use fire-roasted.)
1 tsp cocoa (unsweetened)
a couple of splashes of Worcestershire sauce (optional)
2 tsp juice from pickled jalapeno jar (optional)
Directions
- Brown meat slowly until cooked through. Drain excess oil.
- Add all ingredients, stir and simmer covered for about 20 minutes.
- Serve with sour cream, finely shredded cheese and tortilla chips.
*You can control the heat level by using mild, medium or hot salsa and chili beans.
